Happy St. Patrick’s Day! I don’t know about you, but if there is ever a reason to drink a good mojito, this is a great time for it. Even if you own no ‘green’, you can wear it with your pretty and delicious cocktail spirit in hand!
Taking the traditional iced mojito to the next level, here is a simple way to put a fun & lighter spin on that ordinary recipe.
Serves 6 20 min prep time
3 hour total (for freezing)
1 c. boiling water
1 pkg. (3 oz.) Sugar-Free JELL-O Lime flavor gelatin
¾ c. carbonated lemon-lime seltzer
¼ c. light whiskey OR water (for those who want to keep it virgin)
2 Tbsp. finely chopped fresh mint (optional)
2 Tbsp. limejuice
ADD boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Stir in remaining ingredients.
POUR into 9-inch square pan. Freeze 3 hours or until firm.
SPOON frozen gelatin mixture into large bowl. Beat with mixer on high speed until smooth.
Voila! See, even Italian’s know how to do up St. Patty’s Day :) !
